Healthy recipe: stuffed courgette (zucchini)

This is a recipe that is made on a regular basis in our home. For several months now, we have been eating more and more according to the Paleo lifestyle. This is actually a "diet" based on what our early, early ancestors would eat: vegetables, meat or fish, nuts, seeds, simply anything those cavemen could find or hunt. Back to basics, people. No grains, no processed food! We mix this with something the Dutch speaking folks will recognize: de voedselzandloper (food hourglass) which is a little less strict on the grain part.
So no wheat, no potatoes, no white rice or pasta. We only eat brown rice, our weekly pasta comes in the form of brown rice spaghetti, and sugar doesn't enter this home. Once a week we do eat potatoes in the form of French fries. (Did you know fries aren't French at all: they're BELGIAN! And as true Belgian people we can't ditch those. We fry them in coconut oil though, more on that later.) 
The rice or pasta aren't present with every meal, and guess what? You don't miss them at all. No, you are not hungry with this way of eating (as long as you're eating more of the veggies and stuff). In fact, I'm having a lot less cravings in between meals then before. 

Anyway, this recipe fits in greatly.

Ingredients for 2 persons:

2 courgettes (zucchini for the Americans)
1 red pepper (bell pepper or sweet pepper, not the spicy one)
pine nuts
1 onion
1 can of fish that you like
seasoning to your liking 

How to make it:
Chop the pepper and the onion.
Stew them, I always use the stir frying pan, but I use that for about everything. 

  Meanwhile, slice the courgette in two and take out the inside with a spoon and chop it up 

Add the courgette inside to the onion and pepper. Season with the herbs of your choice. I usually add salt, pepper and some italian seasoning like basil, thyme, oregano.
Also, garlic is really good with this, but I can not tolerate garlic that well, sadly, as i LOVE it!

Turn off the heat after about five minutes and stir in the fish.
Take a baking dish and put the courgette shells in it. Sprinkle a little bit of salt on them. Put in the mixture from the stir fry pan. Add pine nuts on top.
If you like it, you can now put some cheese on top: parmezan or other grated cheese. 

Put in the oven at 175°C for about 20 minutes.
