Peanut butter chocolate chip cookies: sugarfree, glutenfree

One of the things I’m passionate about, is showing people you can have all of your luxury and all of your treats, and be healthy at the same time. You just search for the better, but equally good alternative.
One of those treats for me are cookies. And not just any cookies: chocolate chips will make them a succes for me.

Needless to say, I was so happy to find the following recipe, over at Delicious by Dré’s website. These babies are sweet, but with a slight salty touch, they're chewy and just so good. They don’t contain sugar (except for a healthier alternative), no gluten, no dairy, no nasty additives. Did I mention they are SO GOOD?
I contacted Dré and she kindly agreed for me to share her recipe with my readers, so here it goes!
I may have left something out here and there when making them, so what I’m sharing is how I made them.

Ingredients


  • 1 cup coconut blossom sugar (you can find this in organic shops) 
  • ¾ cup peanut butter (make sure to get it without added sugar or nasties, check the label!)
  • 1 egg
  • 1 teaspoon baking soda
  • chocolate to your taste (I always use the brand Vivani, they make a dark 92% version, which has no added sugar other than coconut blossom sugar. Yep, the perfect chocolate does exist!)

How to make them


1. Put the peanut butter in a bowl, along with the coconut sugar. Mix them until smooth. Mixing them with a hand mixer didn’t work that well for us (that was one dirty kitchen!) so we used the muscle power of my boyfriend. 




2. Add the baking soda and the egg and mix them in. 



3. Cut your chocolate into “chips” and add them in the batter. 



4. Seal in an airtight container and put in the fridge for one or two hours. 



5. Pre-heat your oven (I did mine at 170°C)

6. Cover a baking sheet with parchment paper, and scoop balls of dough of about one tablespoon on the paper. Do not flatten them, because the baking process will do that for you. 

7. Bake for 8-9 minutes, take the sheet out of the oven and leave the cookies to finish baking on it for about 5-10 minutes.



Ready, set, ENJOY!!
